Very Veggie "Pasta Free" Minestrone Soup [vegan] [gluten free]

One of my most memorable soups of all time is my late grandmother's minestrone soup. Studded with everything from cabbage to white beans to potatoes.
I am modernizing it a little by adding kale (not around when I was a kid!) and leaving out the pasta - there are enough carbs in there with the potatoes! I could eat this any time of the year. It is light enough for summer but hearty enough for winter.
I personally love to dunk a perfectly crispy and crunchy French baguette in this one, it checks off all the comfort boxes!
